Intro
This is my everyday white sauce. It is the kind of basic recipe that quietly does a lot of heavy lifting in home cooking. Once you know how to make it properly, you can turn it into cheese sauce, mushroom sauce, parsley sauce, or a simple white wine style sauce with what you already have on hand.
I make this sauce regularly for macaroni cheese, lasagne, vegetable bakes, and quick midweek dinners. It is economical, reliable, and forgiving, which makes it ideal for home cooks at any level.
This is a stovetop recipe. No oven is required.
Why the Recipe Works
A proper white sauce is built on a simple roux of butter and flour, cooked just long enough to remove the raw flour taste. Adding the milk gradually prevents lumps and gives you full control over thickness.
Once the base is right, you can confidently add flavor without the sauce splitting or tasting chalky. This method gives you a smooth, spoon coating sauce that adapts easily to whatever dish you are making.
Ingredients With Judgement
Butter
Use real butter for best flavor. Margarine will work but the sauce will be flatter in taste.
Plain flour
All purpose flour. This is what thickens the sauce.
Milk
Whole milk gives the creamiest result. Semi skimmed works but the sauce will be slightly thinner.
Salt and pepper
Season lightly at first. You can adjust once any additions like cheese are added.

Method Explained

Melt the butter gently in a saucepan over medium low heat. Do not let it brown.

Add the flour to the melted butter. Stir continuously and cook for one to two minutes. This step cooks out the raw flour taste.

Add the milk gradually, a little at a time, whisking well after each addition to keep the sauce smooth.

Once all the milk is added, increase the heat slightly and bring the sauce to a gentle simmer while stirring.

Reduce the heat to low and cook for seven to ten minutes, stirring regularly, until thickened. The sauce should coat the back of a spoon.

Sauce Variations
Cheese Sauce
Add a handful of grated cheese to the finished white sauce and stir until melted.
A handful is roughly 3.5 ounces or 100 grams, but you can adjust to taste.
Good cheeses include cheddar, mozzarella, or a mix.
Add a pinch of paprika or nutmeg if you like.
This is the sauce I use for macaroni cheese and lasagne.
Nacho Cheese Style Sauce
Add American cheese singles to the hot white sauce, one at a time, stirring until fully melted before adding more.
Use about 12 slices for a thick cinema style sauce.
Add a pinch of paprika.
Keep adding cheese until the sauce reaches the thickness you like.
This version is ideal for movie night and casual snacking.
Mushroom Sauce
Cook sliced mushrooms in a pan with a little oil or butter and a clove of garlic until well browned.
Add the cooked mushrooms to the nearly finished white sauce.
Simmer together for five to ten minutes to allow the flavors to combine.
White Wine Style Sauce
Instead of wine, use white wine vinegar which is more affordable and keeps well.
Add one half tablespoon of white wine vinegar and two tablespoons of cream to the nearly finished sauce.
Cook gently for five to ten minutes.
Taste as you go. Vinegar is sharper than wine, so add cautiously.
Parsley Sauce
Add finely chopped parsley to the sauce when it is nearly cooked.
Simmer for five minutes to soften the flavor.
This works well with fish, chicken, or vegetables.
Tips
Stir constantly when adding milk to avoid lumps
If lumps form, whisk vigorously or use an immersion blender
If the sauce is too thick, add a splash of milk
If too thin, simmer a little longer
