7 oz (200 g) chocolate – Dark chocolate gives a richer, more grown‑up flavor; milk chocolate makes a softer, sweeter mousse. Use good‑quality chocolate, as the flavor really matters here. It should be noted however that we have used both store brand cooking chocolate and leftover chocolate from Christmas to make this dessert and each time it was a success.
1 cup (240 ml) heavy cream – Use full‑fat heavy cream ( double cream) for the best texture. Lower‑fat cream will not set properly.

- Heat proof bowl
- Saucepan
- Wooden spoon
- Dessert dishes (or you could use drinking glasses)

Method: Step‑by‑Step Beginner Chocolate Mousse
- Chop the chocolate into small, even pieces and place it in a heat‑proof bowl.
- Heat the cream gently using a bain‑marie (see tips below). Warm until steaming but not boiling.
- Add the chocolate to the hot cream and let it sit undisturbed for 2–3 minutes. Turn off the heat and allow the heat of the cream to do the rest of the work.
- Stir slowly until the mixture is completely smooth and glossy.
- Allow to cool slightly, then divide into serving dishes.
- Chill for at least 2 hours, or until fully set.

- Leftover chocolate from holidays or birthdays works perfectly with this recipe making this is a wonderfully frugal dessert.
- You can chill the mousse in one large bowl and present it as a centerpiece dessert where everyone serve themselves.
- For an extra‑special finish, serve with vanilla ice cream. The contrast is lovely.
- If the mixture looks grainy, keep stirring gently; it usually comes back together.

Ingredients
Method
- Heat a third of of the heavy cream/double cream till it’s just steaming. ( just under one cup or 100mls of cream)
- Add the chocolate to the hot cream. Take the cream off the heat. Allow it to melt in the hot cream and mix after about 2 minutes till combined.
- In a jug, whip the remaining 200 ml heavy cream/double cream to soft peaks
- Allow the melted chocolate mixture to cool slightly ( for about 2 minutes) and then mix the whipped cream into the melted chocolate mixture gently until smooth and combined
- Spoon into small bowls or glasses.
- Place in the fridge for about 2 hours until set
- Top with a piece of chocolate or other toppings of your choice before serving.
