Chocolate Fudge Brownies ( They’re Amazing!)

Im not exaggerating when I say this is the worlds best chocolate fudge brownie recipe. You’ll have to see for yourself when you bake them! You can make these brownies gluten free too. Check out the recipe below!

I don’t make a habit of exaggerating (I swear, it’s true) but these are the best chocolate fudge brownies ever!

My son found this recipe somewhere on the internet and we have tweaked it over and over again to make it our own.

Honestly there is very little preparation needed to bake these brownies. If you have a standard square cake tin and and some parchment, you can improvise with the rest. It uses cup measurements too, so that always makes things easier! I tend to take a look in my pantry before I bake these chocolatey treats, to see if I have any odds and ends that need using up.

On the day I took these photos, I found a little bit white chocolate and some hundreds and thousands that I’d forgotten about. I decided to use them to decorate this batch of brownies. Someone told me lately that hundreds and thousands these are also know as jimmies. How cute is that?


What Kind of Ingredients Do You Need For This Chocolate Fudge Brownie Recipe?

Well, you can buy your ingredients where ever you normally shop, but I’m a big fan of Aldi and other supermarket own brands. All of these ingredients are from Aldi or are supermarket own brands. Yes, sometimes branded items are worth it, but often non branded items are just as good if not better.

It cost me under €4 to make 16 brownies with own brand ingredients. To buy 16 brownies from a coffee shop costs around €40. Thats a huge saving! They freeze and defrost really well too.

Ok…here’s the recipe, enjoy!

Chocolate Fudge Brownies

You can cut this bake into as many pieces as you wish, but we either cut it into 12 or 16.

Cook Time 25 mins

Servings 12 portions

Ingredients
  

  • ½ cup butter
  • 1 cup sugar
  • 2 eggs
  • half tsp vanilla essence
  • ½ cup melted chocolate
  • ¾ cup Plain flour OR gluten free self raising flour mix. If you use GF flour you may need a splash of liquid to avoid dry brownies.
  • ¼ cup cocoa powder
  • 1 cup chocolate chips
  • pinch salt

Instructions
 

  • Preheat the oven to Fan Oven 175°C/350°F/Gas Mark 4
  • Line a square cake tin with grease proof or parchment paper
  • Cream the butter (melted) and sugar
  • Mix the eggs and vanilla to the sugar and butter
  • Melt the chocolate ( not the chips)
  • Let the chocolate cool (just a little so it doesn't ruin the eggs)
  • Mix the chocolate in
  • Add the flour, cocoa powder and pinch of salt
  • Add the chocolate chips
  • Bake for 25 minutes in a preheated oven.
  • Check with skewer to see if it is baked. If it comes out wet but without mixture attached it is baked. If it is still sticking to the skewer it is not ready yet. Watch it carefully if you choose to bake for any longer than the recipe states, as it can get hard very quickly and you don't want that! They should be moist and fudgy. Enjoy!

It's hard to say really. I don't know about you but I haven't been here before. After the 2008 crash the shortage on cash was the problem. Today what looks like never ending inflation is the issue. The last thing I want to do on my socials, my YouTube and my blog is to patronise anyone. You know as well as I do that cut backs will have to be made, and you don't need me to tell you that. 

This winter there'll be tough choices made between bills and presents at the time of year when nobody wants to say no. There'll be extra jumpers shoved over kids heads where in the past you'd throw another bit of turf in the range and just crank it up without it costing you a thought. 

It's pure shite, isn't it?

'I don't know' is my answer to a lot the the questions about money and budgeting at the moment.

'How do I make ends meet'
..or
'How do I save when I have no money left over. Ever. No matter how hard I budget'.

These are questions I get monthly at least. I'm not going to tell you that by the power of perfect budgeting you too can live a debt free life and make all your money dreams come true, because we are in new territory.

I've said it in DM's but now I'll write it here for all to see. The system is fucked. Politics is broken and we little people are invisible as big corporations run the world. There is no need for anyone to be hungry or homeless on this part of the planet at least. It boils my blood...homeless children 14 YEAR post economic crash. 

And, here we are again. The only thing I can say however is that we now have the power of social media to leverage for change in a way that we didn't have back then. Anyhoo...

Till we change the world, phoney politics and an unfit for purpose economic system we will budget and meal plan and stick together as per usual and we can and will help each other out. Keep the faith friends xx

Food on a budget is a must at the minute. This coleslaw goes with sandwiches, salads, meats, chips, lasagna or whatever you fancy. 

To make 3 to 4 medium portions: 

1/4 of a red cabbage 
1/5 of an iceberg lettuce 
Half a carrot
Half an onion 
1 radish 
100g mayonnaise 
50 mls double cream 
Season with tock salt and cracked black pepper 

Let it sit and marinade for about an hour before eating.

How much should I spend on groceries? You can ap How much should I spend on groceries? 

You can approach it in two ways. 

If your budget it tight and you only have a certain amount of money left over each week to spend on food then your goal is to aim to not exceed that amount. Do this by using own brand food, discount supermarkets, yellow sticker deals, eating your leftovers, and meal planning every meal in advance. Consider what you can make from scratch yourself rather than buying prepared foods. Simplify meals and store your food well to avoid any thing going off before you use it. 

Some people like to do surveys or other side hustles to put extra money in their pockets. If you need to spend more on food  you could extend your grocery budget by increasing your income with side hustles.

2. If your not limited so tightly by money, but you still want to set a grocery budget so that you can save money towards other things, you should do a deep grocery spending analysis. 

Keep your receipts and analyse them after a month. 

Categorise what you have bought to create a master list of foods. This is also known as an inventory. 

Observe how much food you waste and commit to reducing that

Plan to buy own brand on items that don’t matter to you too much as dried pasta. 

Make a watch list for the branded items you do want to buy so that you can grab them when they are on offer saving you money in the long run. 

See what you spent in the last month by adding up your receipts and decide on a grocery budget amount that feels right for you and your family. 

Put that amount aside either in cash or in a separate savings account and aim to only spend that on groceries for the month ahead. 

If this amount is working well for you after a month or two then that is your grocery budget. 

If it’s not then increase your budget a little each month till you reach a comfortable spending point, we’re you’ve no good waste and everyone in your family is happy with what you’re feeding them.

At 15p a slice, these are the kinds of savings that can really move the needle when you’re trying to save money and while still living  your best life 🥰

This is a lovely chocolate cake by BBC Food. I e shared it several times but as I’m updating my website I’ve added it to the recipes section. It’s now a girl family favourite so it deserves its place on the blog.

So do it while you’re grocery shopping and keep stocked up now. Own brand on some items can be a great way to save money on groceries especially with the rise in the cost of living. 
We love a takeaway or a meal out each week but it is very easy to get carried away with eating out. Before you know it everyone is grabbing lunch while at work or college and not only is money being spent unnecessarily but food is being waste at home as a result. 

Tiredness can be a real factor in overspending on takeaway food. We all lead very busy lives so a little preparation can go a long way.
