
This is my version of caramel squares. I needed to use up some biscuits so this is what I did! As per usual I used all Aldi ingredients.
I watched this video on one of my favourite channels and made a version of caramel square based on this recipe. This is a fantastic channel that I hope you will go over and enjoy. This is where you’ll find great meal planning ideas and recipes.

Biscuit Base Or Shortbread?
The choice is yours. What is your favourite when you buy caramel squares? Watch the video above from one of my favourite Youtube channels to see how to make the shortbread base. I have used leftover biscuits to make mine. The base was a little crumbly so perhaps you could add more butter than I did. We enjoyed this as it was however.
375g biscuits crushed
240g melted butter
Mix together ( I used a food processor)
Press into a lined square tin
Chill for an hour or more till nice and firm.

Caramel Topping For Caramel Squares
I made the caramel similarly to the video above with one adjustment. I used dark brown sugar whereas the recipe used golden sugar.
2 tablespoons Golden Syrup ( I used cup measures for accuracy)
Condensed milk 400g tin
Dark brown sugar 100g
Butter 100g
Put all into a saucepan and mix well. Bring to the boil. Reduce to a simmer and stir all the time. Do not leave this mixture for a moment. Stir for about 7 minutes.
Pour onto the firm biscuit base immediately. Chill in the fridge for an hour or until firm.
This mixture will be red hot so be extremely careful with it!!

Chocolate Topping
Melt 200g of chocolate and cover the firm caramel after it has set. Allow the chocolate to set in the fridge for an hour or until firm.
Slice into squares and enjoy!
