Cream of Vegetable Soup

This is cream of vegetable soup. It is a large batch. Use within a few days or for a crowd or cool and freeze it for lunch for the rest of the month! This goes so well with soda bread. You can find my soda bread recipe here. It’s thick, smooth, and gently sweet, made with a balanced mix of root vegetables and finished with cream for a comforting, satisfying texture.

Rather than relying on a single vegetable, this recipe is carefully balanced so no flavour dominates. It’s practical, affordable, and built for repeat cooking.

The Vegetables…

This soup uses a combination of vegetables to create flavour, body, and natural thickness without needing flour or thickeners. If you take care to add a gluten free stock, this can be one of your reliable go-to recipes.

• Carrots provide sweetness and colour
• Swede adds body and depth
• Parsnips are used lightly for warmth
• Potatoes thicken the soup naturally
• Onions and garlic create a savoury base

The result is a smooth, nutritious soup that appeals to all ages.

Ideal for batch cooking and freezing

This recipe is made in a large stock pot and is perfect for freezer cooking.

• Freezes well.
• Reheats on the hob or in the microwave ( don’t allow to boil as it will ruin the flavour)
• Taste even better on day two or three!
• Store in portionions to make it easy to pack or grab for lunches.

If the soup thickens after freezing, simply loosen with a splash of hot water or milk when reheating.

Herb and cream options

Dried thyme is main herb in this soup, which pairs naturally with root vegetable. It gives a delicious flavour and beautiful aroma. Add coriander , either fresh or frozen at the end for brightness as an option.

You can finish the soup with either double cream or single cream, depending on what you have available. Double cream gives a richer finish, while single cream produces a lighter result without changing the method.

A practical, everyday soup

This cream of vegetable soup is designed to be reliable rather than fussy. Quantities are generous, the method is straightforward, and the ingredients are easy to adapt depending on what’s in your kitchen. It comes out thick however if you prefer a thinner soup just add some water till you get the consistency you prefer. I like it thick so it coats my soda bread which will be laced with real butter…

That is what this weeks blog is all about.

Waste less food and spend less on your groceries. Waste less food and spend less on your groceries.

The dream says you!

'They' say that an increase to grocery prices is inevitable this winter.

We could just do without it couldn't we?

But we have to control what we can, and we can control our food waste.

I eliminated food waste in my house a few years ago and reduced my grocery bill by 50%.

I'm not saying it was easy. In fact I'd be quite open in saying it was tough and it took a lot of time.

I've put my system together into a bundle that will take some of the work off your shoulders.

The Waste Less, Spend Less system contains:

🌺 an eBook/workbook

🌺 a spreadsheet

🌺 and a chat GPT prompt to help you meal plan with zero food waste in mind.

It is just £9 today for the whole system.

Airfryer chocolate chip cookies 🍪 I used mini eg Airfryer chocolate chip cookies 🍪

I used mini eggs in the video but you can use chocolate chips or other crushed chocolate sweets like M&M’s?

½ cup butter, melted and cooled
½ cup soft brown sugar
½ cup caster sugar
1 egg
1½ cups plain flour
1 tsp bicarbonate of soda
¼ tsp salt
1 cup crushed Mini Eggs, chocolate chips or whatever chocolate sweets you have

Mix everything together, adding the crushed chocolate last.

I use a standard ice cream scoop to make the dough balls. You can cook them straight away or freeze them and take out as many as you want, whenever you fancy something sweet.

Let frozen dough balls defrost slightly and flatten them before cooking.

Bake in the air fryer at 160°C for eight to ten minutes. This timing is for the larger cookies shown in the video. If you make them smaller, they may cook more quickly.

Some people like a very gooey cookie and others prefer them more firmly baked, so adjust the time to suit you and your own air fryer.

Leave them to cool on a rack, where they’ll firm up a little.

Very handy for No Spend September when the children want a treat or you fancy something sweet with your coffee.

Save this recipe for later.
