Ingredients Method

Ingredients
  

  • ½ white cabbage
  • 3 shallots
  • 5 radish
  • 2 tbsp white wine vinegar
  • Rock salt

Method
 

  1. Chop or shred the vegetables
  2. Soak in salt and vinegar over night in the fridge in an airtight container
  3. Mix with mayonnaise when ready to serve
  4. Store in the fridge without mayonnaise for up to a week

Dairy Free Coleslaw

This is a simple dairy free coleslaw recipe. It can easily be adapted by adding other ingredients to suit your family’s tastes. The inspiration for this recipe came about as a result of my recent discovery that I am lactose intolerant. Needing to adapt my diet has been frustrating at times. However, this coleslaw is a lovey addition to my diet so I thought I would share it with you too!

Pickling Vegetables

This recipe is based on the idea of pickled vegetables. This method is used in many different type of cooking. The first step after chopping your vegetables is to add salt and vinegar to the vegetables. I have used white wine vinegar and rock salt. Allow the vegetables to sit in the fridge in an airtight container over night to pickle.

Is Mayonnaise Dairy Free?

Well, it should be. If you don’t count eggs as dairy then it is dairy free. If you are vegan OR allergic to eggs you will need to get a vegan mayonnaise. They can be expensive, but if you get a good one, it is delicious. In my recipe I have used a normal full fat mayonnaise.

Add The Mayonnaise When Serving

This is the trick to keeping your coleslaw fresher for longer. Add the mayonnaise when you are ready to serve it. Take as much as you need from the fridge and add to mayonnaise to the portion that you intend to use.

How Long Does Coleslaw Keep in The Fridge?

Because there is no dairy in this recipe it can last all week. I don’t fully submerge my coleslaw veggies in vinegar so they probably wouldn’t keep for the weeks and weeks that fridge pickles normally would. If you add the mayonnaise to the veggies straight away, it probably needs to be eaten within a day or so.

How To Serve Dairy Free Coleslaw?

You can add other ingredients to the coleslaw when serving or when pickling. If you choose to add other vegetables to the coleslaw and you want it to last all week in the fridge, it is best to only add crunchy vegetables. If you added lettuce for example it would get slimy and nasty pretty quickly.

I love to add peanuts and cold meat to mine. You can add dried fruits, salad veggies, cheeses, and all sorts of other cold foods to make this simple dairy free coleslaw into something really special.
