Ingredients for moussaka (easy recipe)

Vegetable Base

  • 1 large eggplant, sliced into ½-inch rounds

  • 2–3 medium potatoes, peeled and sliced

  • 2–3 tablespoons olive oil

  • 1 teaspoon salt

Lamb & Tomato Layer

  • 1½ pounds ground lamb (or beef)

  • 1 medium onion, finely chopped

  • 1 tablespoon garlic paste (or 3 cloves garlic, minced)

  • 1 tablespoon tomato paste

  • 1 (14-ounce) can crushed tomatoes

  • ½ cup fresh tomatoes, chopped (or additional canned)

  • 1 teaspoon paprika

  • 1 teaspoon dried oregano

  • ½ teaspoon ground cumin

  • 1 teaspoon salt

  • ½ teaspoon black pepper

  • ½ teaspoon sugar

Béchamel Topping

  • 2 tablespoons butter

  • 2 tablespoons all-purpose flour

  • 1⅔ cups milk

  • 1 egg yolk

  • Salt and black pepper, to taste

  • Pinch of nutmeg (optional)

  • ¼–½ cup grated cheese (optional)

Method

1. Roast the Aubergine (Eggplant)

Preheat oven to:

  • 400°F / 200°C conventional / 180°C fan / Gas mark 6

Brush eggplant slices lightly with olive oil and arrange on a baking sheet. Roast for 20–25 minutes until soft and lightly golden.


2. Prepare the Potatoes

Bring a pot of salted water to a boil. Add sliced potatoes and cook for 5–7 minutes until just tender. Drain and set aside.


3. Cook the Lamb & Tomato Layer

Heat 1 tablespoon oil in a large pan over medium heat. Cook onion for 6–8 minutes until soft.

Add garlic and cook for 1 minute.

Add ground lamb and cook until browned, breaking it up well.

Stir in tomato paste and cook for 1 minute.

Add canned tomatoes, fresh tomatoes, spices, salt, pepper, and sugar. Simmer uncovered for 20–25 minutes until thick and rich. The mixture should not be watery.

4. Make the Béchamel

Melt butter in a saucepan over medium heat. Stir in flour and cook for 1–2 minutes.

Gradually whisk in milk, stirring continuously until smooth and thickened.

Season with salt, pepper, and nutmeg if using. Remove from heat and stir in egg yolk. Add cheese if using.

5. Assemble

In a baking dish:

  • Layer eggplant slices

  • Add the lamb and tomato mixture

  • Layer the potatoes

  • Pour béchamel evenly over the top

6. Bake

Bake at:

  • 400°F / 200°C conventional / 180°C fan / Gas mark 6

for 35–40 minutes until golden and bubbling.

7. Rest

Let the moussaka rest for 15–20 minutes before slicing. This helps it set and hold its shape.

  • Fully reduce the meat sauce—this is key to flavor and structure

  • Keep béchamel pourable, not stiff

  • Slice eggplant evenly for consistent layers

  • Let it rest properly before serving

Can I use ground beef instead of lamb?
Yes, beef works well and gives a slightly milder flavor.

Do I need to peel the eggplant?
No, but you can if you prefer a softer texture.

Can I make this ahead?

  • 1 aubergine ( Eggplant) Sliced into 1cm rounds
  • 2-3 med potatoes
  • olive oil
  • 700 g minced lamb
  • 1 med onion Finely chopped
  • 1 Tbsp garlic paste
  • 1 Tbsp tomato puree
  • 400 g chopped tinned tomatoes
  • 1 tsp paprika
  • 1 tsp dried oregano
  • ½ tsp cumin
  • salt and black pepper
  • ½ tsp sugar
Bechamel Topping
  • 30 g butter
  • 30 g plain flour
  • 400 ml milk
  • 1 egg yolk
  • salt and black pepper
  • pinch of nutmeg
  • 50 g grated cheese Optional

Method
 

Prepare the Vegetables
  1. 1. Cook the Aubergine. Brush aubergine slices lightly with oil. Place on a tray.Bake at 180°C fan / 200°C conventional / 400°F for 20–25 minutes until soft and lightly golden. Leave to one side.
  2. 2. Prepare the Potatoes. Boil sliced potatoes 5–7 minutes until just tender. Drain carefully. Leave to one side.
Cook the Lamb & Tomato Layer
  1. Heat oil in a pan. Cook onion 6–8 minutes until soft.Add garlic and cook 1 minute.Simmer uncovered 20–25 minutes until thick and rich
  2. Add mince and brown well
  3. Add tomato purée and cook 1 minute
  4. Add tomatoes, spices, and sugar
  5. Simmer uncovered 20–25 minutes until thick and rich
Make the Béchamel Sauce
  1. Melt butter, add flour and cook 1–2 minutes
  2. Whisk in milk gradually and cook until smooth and thick
  3. Season, remove from heat, and stir in egg yolk
  4. Add the cheese (if using)
Assemble and Bake
  1. Layer aubergine, then lamb mixture, then potatoes, then béchamel
  2. Bake at 180°C fan / 200°C conventional / 400°F for 35–40 minutes until golden.
  3. Rest 15-20 minutes before serving.

Notes

How do I know it is properly cooked?
The top should be golden and bubbling, edges slightly crisp, firm when sliced.

Common Mistakes:
Too much liquid in meat layer. Solution: reduce fully before assembling.
Skipping rest time. The dish will collapse on serving. The rest time allows you to serve a nice clean slice.

Substitutions:
Beef instead of lamb.
Tinned tomatoes instead of fresh.
Cheese in béchamel for a richer finish.
