Moussaka

This Turkish-style moussaka is a deeply comforting, tomato-forward tray bake layered with tender eggplant, soft potatoes, richly spiced lamb, and a light béchamel topping. It’s simpler than Greek versions, but just as satisfying—perfect for a make-ahead family dinner.

Ingredients
  

  • 1 aubergine ( Eggplant) Sliced into 1cm rounds
  • 2-3 med potatoes
  • olive oil
  • 700 g minced lamb
  • 1 med onion Finely chopped
  • 1 Tbsp garlic paste
  • 1 Tbsp tomato puree
  • 400 g chopped tinned tomatoes
  • 1 tsp paprika
  • 1 tsp dried oregano
  • ½ tsp cumin
  • salt and black pepper
  • ½ tsp sugar
Bechamel Topping
  • 30 g butter
  • 30 g plain flour
  • 400 ml milk
  • 1 egg yolk
  • salt and black pepper
  • pinch of nutmeg
  • 50 g grated cheese Optional

Method
 

Prepare the Vegetables
  1. 1. Cook the Aubergine. Brush aubergine slices lightly with oil. Place on a tray.Bake at 180°C fan / 200°C conventional / 400°F for 20–25 minutes until soft and lightly golden. Leave to one side.
  2. 2. Prepare the Potatoes. Boil sliced potatoes 5–7 minutes until just tender. Drain carefully. Leave to one side.
Cook the Lamb & Tomato Layer
  1. Heat oil in a pan. Cook onion 6–8 minutes until soft.Add garlic and cook 1 minute.Simmer uncovered 20–25 minutes until thick and rich
  2. Add mince and brown well
  3. Add tomato purée and cook 1 minute
  4. Add tomatoes, spices, and sugar
  5. Simmer uncovered 20–25 minutes until thick and rich
Make the Béchamel Sauce
  1. Melt butter, add flour and cook 1–2 minutes
  2. Whisk in milk gradually and cook until smooth and thick
  3. Season, remove from heat, and stir in egg yolk
  4. Add the cheese (if using)
Assemble and Bake
  1. Layer aubergine, then lamb mixture, then potatoes, then béchamel
  2. Bake at 180°C fan / 200°C conventional / 400°F for 35–40 minutes until golden.
  3. Rest 15-20 minutes before serving.

Notes

How do I know it is properly cooked?
The top should be golden and bubbling, edges slightly crisp, firm when sliced.

Common Mistakes:
Too much liquid in meat layer. Solution: reduce fully before assembling.
Skipping rest time. The dish will collapse on serving. The rest time allows you to serve a nice clean slice.

Substitutions:
Beef instead of lamb.
Tinned tomatoes instead of fresh.
Cheese in béchamel for a richer finish.

Key Tip:
Take time to reduce the meat and tomato mixture properly for best flavour.
