Easy Homemade Coleslaw Recipe

This is a lovely colourful side dish to go with grilled meats or to top a homemade burger. Personally, I love coleslaw with chips. I have found that red cabbage is really nice for a coleslaw in comparison to while cabbage. I think it has a nicer bite to it?!
This is a creamy recipe. If you need to make it lactose free, just leave out the cream and add in a little of your favourite lactose free milk.
Easy Homemade Coleslaw Recipe Ingredients
1/4 of a red cabbage
1/5 of an iceberg lettuce
Half a carrot
Half a white onion
1 radish
100g mayonnaise
50g double Cream
Season with rock salt and cracked black pepper.
Method Easy Homemade Coleslaw Recipe
Step 1:
Use a mandolin if you have one to slice your vegies thin and fine. If you don’t have one, you could use a food processor with the fine slicer or a grater. Maybe you’ve got great knife skills, if you do, use those instead!
Step 2:
Rinse and dry your chopped vegetables well
Step 3:
Season with rock salt and ground black pepper
Step 4:
Add the mayonnaise and double cream and combine well
Step 5:
Allow to sit for an hour before eating. You can choose to let it sit at room temp or in the fridge which ever you prefer. I personally prefer it at room temperature but if its very hot where you live, refrigerate it so that it doesn’t spoil.
Step 6:
Serve with your favourite meal. We recently had this coleslaw with homemade Nando’s chicken and peri peri chips. Go here to see how we made that delicious fake-away.
