Pancakes

Thin, soft pancakes made with simple cupboard ingredients. Similar to crepes but slightly thicker, this easy family recipe is perfect with lemon and sugar, syrup, or savoury fillings. Popular in the Uk and in Ireland.

Ingredients
  

  • 125 g all purpose flour - plain flour
  • 2 medium eggs
  • 320 mls milk
  • pinch of salt
  • 1 tbsp oil or melted butter

Method
 

  1. Put the flour and salt into a mixing bowl.
  2. Crack the eggs into the bowl.
  3. Add about half of the milk and whisk until smooth.
  4. Gradually pour in the remaining milk, whisking as you go, until you have a thin, smooth batter.
  5. Stir in the oil (or butter)
  6. Leave the batter to rest for 15 minutes.
  7. Heat a non-stick frying pan over medium heat and lightly grease it
  8. Pour in a ladle of batter and tilt the pan so it spreads into a thin layer
  9. Cook for 1–2 minutes until the edges lift and the underside is lightly golden.
  10. Flip and cook the other side for about 1 minute.
  11. Repeat with the remaining batter.
