Breadcrumbs

Break cold, dry or slightly stale bread into small, evenly sized pieces. Working in small batches, pulse in a food processor until the desired texture is reached. Use immediately or portion into suitable freezer containers or bags for later use.

Ingredients
  

  • Leftover bread, blitzed into breadcrumbs; fresh or frozen any type that works i.e. dry and doesn't clump.
  • Some butter and oil
  • Your preferred seasonings salt, pepper, garlic, herbs and onions are good standard seasonings depending on what you are using the breadcrumbs for.

Method
 

Suggested Use-Sage & Onion Stuffing
  1. 1. Take 200g of your breadcrumbs either fresh or frozen and set it aside.
  2. 2. Sauté 1 finely chopped medium onion in butter 1 tbsp of butter and 1 tbsp of olive oil.
  3. 3. Toss 200g of breadcrumbs into the cooked onion mixture.
  4. 4. Add seasonings such as salt, pepper and garlic powder to taste.
  5. 5. Add sage to taste-use dried or fresh depending on preference. (2 teaspoons dried or 2 tablespoons fresh)
  6. 6. For a firmer stuffing, add in one egg and stir.
  7. 7. OR for a crumblier stuffing add in another tablespoon of melted butter and stir.
  8. Bake at 180℃/160°Fan for 30 minutes.
  9. Stuffing is a very adaptable recipe. Adjust to taste as much as you like. For a beginner, this recipe as written, is a great starting point.
Suggested Use-Add to Meatballs
  1. Add 25-50g of breadcrumbs to 500g of minced meat or chicken
  2. The breadcrumbs can be fresh or frozen
  3. No need to cook the breadcrumbs when adding to raw meat
  4. Add your preferred seasonings to the meat balls with the breadcrumbs and cook as per your recipe.
  5. Breadcrumbs can be a great way to bulk out recipes if you want to use less meat. They can also add to the texture and taste.
    You may need to adjust baking times slightly as the breadcrumbs may make your meat balls bigger, but as they are already a cooked product, it shouldn't make much difference to it.
